Vegetable pasta


Making the most of vegetables
There are so many lovely vegetables available, these are some of the vegetables I use

  • 1 Large carrot finely chopped
  • 1 Medium Sized Leek
  • 8/10 button mushrooms chopped
  • 1 Sweet Pepper chopped
  • 1 Small Courgette chopped
  • 125ml of strong vegetable stock
  • 1 Table spoon of tomato puree
  • 2 crush cloves garlic
  • 1 teaspoon of dried basil
  • 1 teaspoon dried oregano
  • or 2 teaspoons of mixed herbs
  • 1 large tin of chopped tomatoes

This dish serves 4/6

Place all the ingredients into a large saucepan and bring to the boil and simmer gently for approx 30 mins so all the flavour infuse making a lovely vegetable sauce.  Then cook pasta of own choice and mix together with a good serving of Parmesan cheese.  You can change or add different vegetables.  I particularly like this dish with a Bread Meat Escalope.
