Apple Couscous Pudding

  • 600ml of apple juice
  • 115g couscous
  • 40g sultanas
  • 1/2 tsp mixed spice
  • 1 large bramley apple peeled cored and sliced
  • 2 tbsp demerara sugar
  1. Pre heat oven to 200c/400f/Gas mark 6.
  2. Place the apple juice, couscous, sultanas and spice into the pan and bring to the boil stirring.
  3. Cover and simmer for 10/12 minutes until all the liquid is absorbed.
  4. Spoon half the mixture into A 1.2 LITRE ovenproof dish and top with half the apple slices then top with rest of the mixture.
  5. Arrange the remaining apple slices overlapping and top with demerara sugar,
  6. Bake for 25 to 30 mins in the over serve with natural yoghurt.
