Fisherman’s Casserole

  • 6 Teaspoons of Olive Oil
  • 2 Spanish Onions Sliced
  • 1 Sliced Red Pepper
  • 12Og of sliced mushrooms
  • 45Og tin of chopped tomatoes
  • A good pinch of thyme
  • Salt and Pepper
  • 43Oml water
  • 9OOg of white fish fillets of own choice (I have chosen haddock)
  • 14Oml of med white wine
  • 2 teaspoons of chopped parsley

Heat oil in a saucepan, add onion and cook until translucent, add peppers until soft, add mushrooms and tomatoes bring to the boil. Add thyme, salt, pepper and water and simmer for 3O mins, add fish and wine and cook for 15 mins until fish can flake,

Stir in parsley and serve. This casserole can be personalised, you could add prawns or a choice of two different fishes.
