| 175g plain flour |
| 75g margarine(hard) |
| 2/3 tablespoons of water |
| 45Og Rhubarb cut into 1 inch lengths |
| 1 Egg |
| 175g caster sugar |
| 25g cornflour |
| 25g butter |
| grated rind of 1 lemon |
| juice of 1 lemon made up to 15Oml with water |

Put flour into bowl and rub in fat until it resembles bread
crumbs, add water and mix to a soft dough and chill. Roll
out pastry into 1O inch flan dish. Arrange Rhubarb in circles
in the dish. Put egg, sugar, cornflour, butter, lemon rind
and juice into the pan, bring to the boil slowly, stirring
continuously. Spread this mixture over the rhubarb, place
in pre-heated oven for 4O mins or in a moderate oven, Gas
4 2OOc/4OOc. Serve warm
