Pasta with Mascarpone and Spinach Sauce


Serves 4

  • 35Og of dried pasta e.g Fusilli
  • 5Og butter
  • 1 chopped medium onion
  • 1 garlic clove chopped
  • 2 teaspoons of thyme
  • 225g of frozen spinach leaves thawed
  • 225g mascarpone cheese
  • salt and black pepper

The Sauce

Melt butter and cook onions until soft, stir in garlic herbs and spinach and seasoning heat gently for 5minutes until heated through. Stir in mascarpone cheese and cook gently, do not boil.

Cook pasta as instructions, in salted water, drain pasta and toss the sauce and pasta together, until well coated, serve immediately.
