Banana Bread & Butter Pud
(Featured September '03)

A great way to use up bananas, but delicious

It is best to use bread that has not been pre-sliced

8 thick slices of white bread buttered
3 teaspoons of ground cinnamon
2 small or 1 large very ripe banana
50g of dried raisins
2 large eggs
3 tablespoons of white sugar
500ml of milk ( you can make a mix of milk and cream)


Sprinkle the buttered bream with the cinnamon
Remove Crusts and cut into fingers
I a bowl mix together the slices of banana, raisins, Place in a separate bowl the eggs sugar and milk and beat them altogether.

Take a baking dish are layer fruit and bread in layers, the pour over the egg mixture. Before placing it into a preheated, moderate oven until set, approx 50mins, Let it all soak for a while and use the back of the spoon to disperse the liquid.

Serve with vanilla ice cream.
