Elizabeth's Normandy Chicken
(Featured Oct '04)

600g of diced chicken can be mixed thigh and breast or all breast this is a matter of choice
1 Chopped onion
1 Crushed garlic
150g of sliced cooking apples
Salt and Pepper
500ml of cider
300ml of good quality chicken stock.
2 bay leaves
Cornflower to thicken

A a healthy option i do not pre fry anything, I start by placing all the ingredients except the chicken and apples into a saucepan, bring to the boil and thicken slightly then, in a casserole I place the chicken and apples and pour everything over the chicken and place it in a preheated moderate oven and cook for approximately 1 hour, this is then served with baby new potatoes and a selection of fresh green vegetables.

Very simple and quite low fat
