Tomato and Mozzarella Flan.


This is a great recipe to freeze also, if you want to use the tips and then use the stalks for the sauce, it is a great way to save on any wastage


Ingredients

Preheat oven to 180°C (350°F).
Wash and core tomatoes
Place pastry case in flan dish.
Spread with mustard, then slice mozzarella and arrange in pastry case.
Slice tomatoes and arrange on top.
Season.
Sprinkle with grated cheese
Slide dish into oven, leave to bake for about 45 mins, checking regularly.


Cook for between 45 mins and an hour, or until the mozzarella liquid has evaporated. If it starts to brown too quickly put a little foil to cover top

Serve with mixed leaves some fresh croutons and also warm a little french dressing and pour over just as you are going to serve
