Serves 4
300g Mushrooms
1 Pack of Spinach pre washed is better
1 ltr Vegetable Soup stock
75ml whipping or Double Cream
salt and fresh ground black pepper
2 tbsp Olive oil
1 medium onion, chopped
2 cloves of Garlic crushed
2 Large Potatoes diced
1 tbsp ground cumin this give a nice warm taste
1. Soften onion in pan add potatoes and garlic, cumin salt & pepper and just saute
2. Add spinach and chopped mushrooms and stock, bring to the boil and simmer until the potatoes are soft.
3.Add cream and then blend all the ingredients, I usually add more black pepper. If the soup seems a little thick add a little more vegetable stock.
I put this recipe together with ingredients I had in the fridge during the snow!
