Cod & Chorizo Bake


To Serve 4

  • 4 Meaty Cod Loins approx 175g per loin skinned
  • 1 large Spanish Onion diced
  • 3 large potatoes diced and par boiled
  • 1 small chorizo cut into 1cm chunks

Place potatoes onions & chrizo into a frying pan with olive oil soften the onions and start to brown potatoes, in the meantime, pre heat oven to a medium heat,  when the onion are soft and the potatoes slightly brown place into a oven proof dish and then lay the cod on the top. Place in the oven for 25minutes then serve.  The Chorizo can be changed to diced smokey bacon.

I usually serve this with a green salad or some boiled green vegetables
