Runner Beans Onion & Tomatoes


  • 15g butter
  • 1 medium onion chopped
  • 1 garlic clove crushed
  • 400g can of chopped tomatoes
  • 700g of young runner beans topped tailed and cut into 2cm lengths
  • 1 tablespoon chopped fresh basil
  • salt and pepper

Melt butter in large saucepan and cook onions and garlic gently until soft and browned. Add can of tomatoes and simmer for 10 to 15 mins until liquid has reduced. Stir in runner beans and basil and cover with a lid and cook for 10mins until beans are tender but still crisp can be served hot or cold.
