- 600ml of apple juice
- 115g couscous
- 40g sultanas
- 1/2 tsp mixed spice
- 1 large bramley apple peeled cored and sliced
- 2 tbsp demerara sugar
- Pre heat oven to 200c/400f/Gas mark 6.
- Place the apple juice, couscous, sultanas and spice into the pan and bring to the boil stirring.
- Cover and simmer for 10/12 minutes until all the liquid is absorbed.
- Spoon half the mixture into A 1.2 LITRE ovenproof dish and top with half the apple slices then top with rest of the mixture.
- Arrange the remaining apple slices overlapping and top with demerara sugar,
- Bake for 25 to 30 mins in the over serve with natural yoghurt.
